Jo Segar's Cheese Puffs
This recipe has been a long-term weekend standby in our house, but it was made really popular in the first lockdown when Hilary Barry (how much do we all love her) cooked them for a Formal Friday lockdown baking video. The best eaten warm - they don’t improve on keeping! Thanks for Jacqui C for reminding me that these were missing from our site.
Ingredients
3 cups grated cheese
2 cups flour
2 eggs
4 teaspoons baking powder
3/4 cup milk
Method
Pre-heat oven to 240C (the hottest it goes to). Mix all ingredientes together in a large bowl. Drop spoonfuls of mixture onto a lined tray and place in the hot oven immediately. Make sure you close the oven door as quickly as possible then turn the oven off (personally I leave it on for two minutes then turn off). Bake for 10 minutes. Remove from oven and cool on a wire rack. Serve warm. Makes about 12.
