Stephen's Rosemary & Parmesan Biscuits
After Melanie died Claudia and I were sorting out her apartment. After one particulary long afternoon Claudia declared she needed a Gin & Tonic pronto. In happy news we had some gin and tonic from Melanie’s supplies, but no ice!! In happy news I nipped over to Melanie’s neighbours Stephen and Ross who supplied us with ice and also these delicous biscuits (and a lemon - they really are top notch neighbours). They were so good I demanded the recipe so here it is.
INGREDIENTS
160 g flour
2 Tbsp self raising flour
½ tspn salt
small pinch cayenne pepper
125 g butter
1Tbsp finely chopped rosemary
60 g grated parmesan
1 Tbsp lemon juice
METHOD
Put both flours, salt & cayenne pepper into food processor. Chop butter and add. Process for
about 30 secs until flour goes yellow and you can’t see any bits.
Add parmesan & rosemary. Whizz. Add lemon juice & whizz for approx. 5 seconds. Mix
should begin to join up, but don’t let it form a ball.
OR … you can do all of the above by hand. Rub butter into flour etc.
Turn onto a surface and form into a roll. Wrap & leave in fridge for 30 mins, or up to 2 days.
Turn oven on to 180C.
Unwrap dough & slice evenly (25-30+ slices). Thinner biscuits are crunchier.
Place on greased oven tray or baking paper.
Bake for 20 – 25 mins.
Cool on rack.
