Cauliflower Cheese

Juliet came to lunch today and asked for this recipe. I explained that we got taught how to make white saucet at school and then proceeded to make 101 receipes with it (the curried sauce was the worst). Here is how I make caluiflower cheese.

Ingredients

Caulflower (whole - if making a half then half the rest of the ingredients)

2T butter

2T flour

2c milk

1c cheese

2 slices of white bread

Another nob of butter

Method

  1. Preheat oven to 180c.

  2. Cut the cauliflower into florets. Place in a microwave proof container and add 1/4c water. Cover with gladwrap or a lid and microwave until cooked (I still like it a bit firm, but you can give it a poke with a fork).

  3. To make the white sauce melt the butter in a pot over a medium heat. Add the flour to make a paste and cook for 1 minute on low/medium. Then slowly add the milk whisking as you go. When all added keep stirring until it comes to a slow boil. Cook for 2 minutes. Turn off and season with salt and pepper and add 3/4 of the cheese.

  4. To make the crumb place the slices of bread in the food processer. Blend until crumbs. Add a know of butter and the rest of the cheese.

  5. To assemble place the caulflower in an ovenproof dish. Pour cheese sauce over and top with crumb mix. Bake for 25 minutes.
