Natasha's Pikelets

Natasha came and did some cooking with me and made these delicious pikelets. They are great for eating now or keep in the fridge. You can also freeze them and pop them in a lunchbox frozen and they’ll be fresh and ready for morning tea at school. The recipe is from the Chelsea Sugar Website.

Ingredients

1 cup Flour (150g)
1 tspnBaking Powder
1/4 tsp salt
1 egg
1/4 cup White Sugar (56g)
3/4 cup Milk (190ml)

Method

Sift flour, baking powder and salt into a bowl.

In another bowl, whisk egg and sugar until thick. Make a well in the centre of the flour mixture and add the milk/egg mixture a bit at a time whisking until smooth.

Spoon tablespoons of mixture onto a hot non-stick frying pan. Cook until bubbles start to appear on the surface. Flip pikelets over and cook on the other side until golden.

Place in a clean tea towel or plate with paper towel to keep warm while you cook the remaining mixture.

Delicious served with butter, jam and cream, or butter and golden syrup!
