Giant Afghans

Helen has pulled this one out of the archives. From memory it came from a newspaper column where you could write in and get a recipe you liked from a cafe. Helen used to make these and send them down to my friend Adam and me at university. Helen has now retrieved the recipe from her archives off an email sent on July 4 1998 printed out onto fax paper! She had just sent the recipe to Adam and sent it on to me with a suggestion I make him some for his birthday. I’m not sure I complied - sorry Adam, but I’ll resend you the recipe now.

Ingredients

(Helen obviously wrote this assuming Adam didn’t have scales. This was probably true.)

500g butter

500g sugar (2 1/2 cups)

4 1/2 cups flour

70g cocoa powder (4 teaspoons - 25g)

150g cornflakes (look a the weight on the packet and you will get a good idea of how much to put in)

Method

Cream together butter and sugar, add sifted flour and cocoa powder, then the cornflakes.

Roll the dough into a roll 9cm in diameter. Cut 1cm thick slices from the roll and place onto a baking tray.

Bake at 180C for 20-25 minutes or until cooked (not too much bottom heat).

Ice with chocolate icing and top each with a walnut.
