Helen's Whitebait Fritters

Voted number one whiitebait recipe by all of us. Helen tells us this is another Foodtown recipe gem form the mid-eighties.

Ingredients

250g whitebait

2 tablespoons flour

4 tablespoons milk

2 eggs, separated

Salt and pepper

Oil or clarified butter

Method

Wash the whitebait, then dry in paper towels (I wash in a sieve and leave to drain for an hour). Mix flour to a smooth paste with milk and beaten egg yolks. Season with salt and pepper. Whip the egg whites to stiff peaks and fold in the flour mixture and whitebait. Shallow-fry tablespoons of he mixture and drain on paper towels and serve immediately with lemon wedges.
